Pepsin/basic proteins molar ratio required to obtain the greatest number of the insoluble complexes depends on pH. Pepsin/basic protein complexes are dissociated by calcium chloride, high concentrations of sodium chloride and, to a lesser extent, by high concentrations of urea. This points to the ionic character of the bonds between the constituents of the complexes.
