Badano jakość zdrowotną i odżywczą ziemniaków 3 odmian: Bryza, Sokół i Ania z gospodarstw ekologicznych i konwencjonalnych. Oznaczono zawartość azotanów, azotynów, suchej masy, witaminy C, skrobi i białka. Nie stwierdzono istotnych różnic jakościowych między odmianami Bryza i Sokół, ani między odmianami Sokół i Ania. Ziemniaki ekologiczne wykazały lepsze cechy jakości zdrowotnej i odżywczej niż ziemniaki konwencjonalne.

Organic methods in agriculture are thought to be environment-firiendly and beneficial to crop quality. Comparative studies conducted in West Europe and the U.S.A. revealed that organic-cultivated potatoes were more friendly to human health and superior in their nutritive quality. The organic potatoes contained less nitrates and more vitamin C, starch and essential aminoacids. To find out whether these findings are valid also in Polish circumstances, some important characteristics of the nutritive quality of three potato varieties, Bryza, Sokół and Ania from the organic and conventional farms were compared. The contents of nitrates, nitrites, dry matter, vitamin C, starch and raw proteins were determined. Significant differences between the Bryza and Sokół and between Sokół and Ania varieties were not detected. Less nitrates and total proteins, but more vitamin C, dry matter and starch were found in the organic potatoes, while the level of nitrites was similar. The organic potatoes are better in their nutritive value and more friendly to human health than the conventional potatoes.
