Oznaczono zawartość tiaminy, ryboflawiny, niacyny i witaminy B6 w soi i w wybranych produktach sojowych. Wyniki badań pozwalają stwierdzić, że przebadane produkty stanowią dobre źródło witamin grupy B, a zwłaszcza tiaminy i witaminy B6.

The aim of this study was to determine levels of vitamins В in soybean, soya germ and soya products. The food samples were collected in Gdańsk shops. Concentrations of thiamin, riboflavin, niacin and vitamin B6, were determined by microbiological methods. The products studied were characterised by different contents of particular vitamins.The highest levels of vitamin В (especially thiamin and vitamin B6) were found in soybeans and in soya flour. The results show that soybean and soya-products can be a natural way for raising of the nutritional value in the alternative diets.
