Celem pracy było określenie zawartości aminokwasów, w tym kwasu glutaminowego i proliny, w wybranych odmianach roślin w aspekcie ich wpływu na toksyczność białek w celiakii. Stwierdzono znacznie wyższą zawartość kwasu glutaminowego i proliny w białku pszenicy w porównaniu z białkiem roślin uważanych za względnie bezglutenowe lub bezglutenowe. W pracy przedstawiono najnowsze hipotezy dotyczące mechanizmu powstawania celiakii. Opisano zagadnienia związane z wykrywaniem i identyfikacją peptydów toksycznych występujących w białku roślin uprawnych. Przedyskutowano metody eliminacji lub obniżenia toksyczności szkodliwych peptydów.

The aim of the study was estimation of aminoacids content including glutamic acid and proline in some plants and effect on toxicity of protein in coeliac disease. Content of glutamic acid and proline was higher in wheat protein in comparison with protein of gluten-free plants. New hypotheses about ethiopathology of coeliac disease are presented. Problems with detection and identification of toxic peptides present in crop plants protein were described. Methods of elimination or lowering of peptides toxicity are discussed.
