The aim of the study was to investigate the influence of nitrates and nitrites on binding of caffeine with casein and milk proteins. The studies were conducted using a simple in vitro experimental dialysation model, in that the caffeine diffused through a semi-penetrable membrane. Changes in caffeine concentrations were determined spectrophotometricaly. Nitrates and nitrites were added to different reaction conditions containing caffeine, milk and casein in order to determinate their influence on interactions between caffeine and milk proteins. The interpretation of kinetics curves was made and the constants k were determined. In reacting conditions containing caffeine and casein or milk in different concentrations the binding between caffeine and these proteins were observed.
