Cel pracy: ocena, na modelu zwierzęcym, zmiany składu diety i rodzaju jej suplementacji witaminami z grupy B na całkowitą zdolność antyoksydacyjną wątroby (Total Antioxidative Capacity). 48 samców szczura szczepu Wistar podzielono na grupy i żywiono: I paszą podstawową (PP), II–IV paszą zmodyfikowaną (PZ), w której 83,5% pszenicy obecnej w PP zastąpiono mąką pszenną, a 50% kukurydzy – sacharozą. Zwierzęta do picia otrzymywały z grup: I–II wodę, III (PP + suplementacja uzupełniająca SU) witaminy w ilościach uzupełniających różnice między paszą PP i PZ, IV (PZ + suplementacja nadmiarowa SN), dodatkowo ilość witamin 2–4-krotnie przekraczającą normy RDA. Oznaczono: w surowicy stężenie glukozy, białka całkowitego i albumin, w tkance wątrobowej aktywność GST, GPx, CAT, SOD oraz TAC. Stwierdzono, że PZ oraz PZ+SU nie wpłynęły istotnie na badane parametry. Suplementacja nadmiarowa (PZ+SN) przy podwyższonej glikemii (P ≤ 0,05) przyczyniała się istotnie (P ≤ 0,05) do zwiększenia TAC w wątrobie mimo istotnego (P ≤ 0,01) zmniejszenia jej masy i syntetyzowanej przez nią albuminy (P ≤ 0,05). Suplementacja witaminami wpływała na całkowity status antyoksydacyjny wątroby u szczurów.

The objective of this research was an assessment of the impact of diet modification and supplementation (adequate and excessive one) with vitamins B1, B2, B6 and niacin, on the total antioxidant capacity of the liver. 48 male Wistar rats were divided into groups (n = 12); group I was fed a Basic Diet (BD), while groups II–IV were given a Modified Diet (MD), in which 83.5% of wheat present in BD was replaced with wheat flour, and 50% of maize – with sucrose. Groups I–II were given water, while group III (MD + adequate supplementation AS) received vitamins in quantities which supplemented the difference between BD and MD diets, and group IV (MD + excessive supplementation ES) was additionally given vitamins in quantities exceeding RDA norms for humans 2 to 4 times (B1 – 2.3 times, B2 – 3.8 times, B6 – 3.8 times, niacin – 2.5 times), calculated into quantitates appropriate for rats. Subsequently, the blood serum was examined to determine the concentration of glucose, total protein and albumins. In the liver tissue, the level of total protein and the activity of GST, GPx, CAT, SOD and the total antioxidant status (TAC) were assessed. It has been concluded that diet modification (MD) and its adequate (MD + AS) and excessive (MD + ES) supplementation with vitamins have not affected the final body mass and achieved gains, even though it significantly (p ≤ 0,01) affected the rise in feed consumption and energy, in comparison to the control group (BD). Significantly (p ≤ 0,01) the lowest mass was found among the animals in the experiment groups. No significant impact of the experiment factors on the total protein concentration was found in the blood serum. However, it was ascertained that a significant (p ≤ 0,05) fall of albumins concentration in the blood serum of animals in the PZ + SN group took place, in comparison to the control group. It was concluded that there is no impact of diet modification and its supplementation the activity of GPx, GST, SOD and CAT. However, the excessive supplementation (MD + ES) combined with raised glycaemia (P ≤ 0,05) affected the rise of TAC (P ≤ 0,05) in the liver. A diet modification, constituting in a replacement of whole meal grains with wheat flour and sucrose, with a larger amount of feed consumed, has not affected the examined parameters significantly. The applied supplementation with selected B vitamins has not changed anything in this respect. However, excessive supplementation of the modified diet with vitamins has led to an increase of the total antioxidant potential of the liver tissue. The excessive supplementation with vitamins affects on the total antioxidant status of the liver in rats.
