There are presented the results of laboratory examination of the influence of relative air humidity and time of storing apples, carrots and potatoes on physiological and total weight losses. The lowest total weight losses during prolonged storage occurred in conditions of relative humidity φ = 96% for apples and carrots and φ = 90-94% for potatoes. The relative air humidity being too high or too low, the lasses grow due to microbiological processes and the time of safe storage gets abridged.
