The paperwork presents the influence of the fermentation process on respective 6 fatty acids (palmitic, stearic, oleic, linoleic, linolenic, eicosenoic) in dried red and white grapes seeds in the settings of the wines. To analyze the profile of the tested compounds were used technique of gas chromatography (GC) with flame–ionizing detector (FID). Results from the chromatograms before and after the fermentation process revealed changes in the share of fatty acids tested in the seeds (in the whole and ground) selected for analysis of berries.
