Jednym z najczęściej wskazywanych zagrożeń współczesnego świata jest emisja gazów cieplarnianych i ich udział w zmianach klimatycznych naszej planety. Udział poszczególnych produktów, technologii czy organizacji w emisji gazów cieplarnianych, wyrazić można w postaci uniwersalnych wskaźników ekologicznych. Jednym z nich jest ślad węglowy (Carbon Footprint – CF), który określa ilość gazów cieplarnianych (wyrażonych w postaci ekwiwalentu CO2eq) wyemitowanych do atmosfery w trakcie wytwarzania jednostki funkcjonalnej produktu. Celem podjętych badań była analiza dostępnych w literaturze danych dotyczących wielkości śladu węglowego podczas produkcji surowców zwierzęcych. Narzędziem wykorzystywanym w celu określenia wartości CF była Analiza Cyklu Życia (LCA). Na podstawie literatury wykazano, że wartość CF przy produkcji wieprzowiny w różnych systemach rolniczych kształtuje się w granicach od 2,06 kg CO2eq/kg (Dobra Praktyka Rolnicza) do 3,97 kg CO2eq/kg (Organiczna Produkcja Rolnicza). Ślad węglowy przy produkcji mleka jako surowca wynosi od 0,88 – 1,5 kg CO2eq/l - nie wykazano statystycznie istotnych różnic w wartości CF dla gospodarstw ekologicznych i konwencjonalnych. Ślad węglowy stanowić może miarodajny wskaźnik ekologiczny produkcji rolnej, obrazujący stopień zrównoważenia tej produkcji, przy uwzględnieniu zróżnicowania: form produkcji rolnej, różnic geograficznych, różnic technicznych, technologicznych oraz zasobów naturalnych.

One of the most often discussed the risks of the modern world is the emission of greenhouse gases and their contribution to climate change on our planet. The share of individual products, technologies and organizations in greenhouse gas emissions, can be expressed as a universal environmental indicators. One is the carbon footprint (Carbon Footprint - CF), which determines the amount of greenhouse gases (expressed as equivalent CO2eq) emitted to the atmosphere during the production of a functional unit of product. The aim of this study was to analyze the available literature data on the size of its carbon footprint during the production of animal materials. Tool used to determine the CF value was Life Cycle Analysis (LCA). On the basis of the literature showed that the CF value in the production of pork in various agricultural systems ranges from the 2.06 kg CO2eq/kg (Good Agricultural Practice) to 3.97 kg CO2eq/kg (Organic Agricultural Production). The carbon footprint for the production of milk as a raw material is from 0.88 - 1.5 kg CO2eq / l - no statistically significant differences in CF values for organic and conventional farms. The carbon footprint can be a reliable indicator of the ecological agricultural production, illustrating the degree of sustainability of this production, taking into account the diversity of: forms of agricultural production, geographical differences, differences in technical, technological and natural resources.
