Głównymi źródłami kwasu dokozaheksaenowego (OHA) w diecie człowieka jest mięso ryb. W artykule omówiono możliwości otrzymywania kwasu dokozaheksaenowego z komórek drobnoustrojów. Zdolność do syntezy DHA wykazują wszystkie mikroorganizmy. Najlepszymi producentami DHA są mikroalgi i to one znajdują zastosowanie w przemysłowej produkcji olejów bogatych w DHA. Wśród nich można wymienić heterotroficzny protist Crypthecodinium cohnii oraz szczepy mikroalg Schizochytrium. Zastosowanie oleju z mikroalg dopuszczono m.in. do produktów mlekopodobnych, tłuszczów do smarowania oraz suplementów diety. Należy przypuszczać, iż asortyment produktów spożywczych wzbogaconych w kwas dokozaheksaenowy pochodzenia mikrobiologicznego będzie coraz większy.

The main source of docosahexaenoic acid (DHA) in the human diet is fish meat. The article discusses the possibility of production of docosahexaenoic acid by the microbial cells. The ability to synthesize DHA is indicated by all microorganisms. Microalgae are the best producers of DHA.These include heterotrophic protist Crypthecodinium cohnii and the strains of microalgae Schizochytnum. They are employed in the industrial production of oils rich in DHA. The use of oil from microalgae was admitted to milk-like products, spreadable fats and food supplements. It should be expected that the assortment of food products enriched with microbial docosahexaenoic acid will be increasing.
