Konieczność ograniczania spożycia jaj od lat budzi wiele kontrowersji. Wprawdzie efekt hipercholesterolemiczny jaj jest słaby, jednak zwraca uwagę ich niekorzystny wpływ na lipemię poposiłkową, a ponadto także na poziom tlenku trimetyloaminy, związku wykazującego toksyczne działanie na tętnice. Wyniki przeprowadzonych do tej pory badań kohortowych i klinicznych nie dostarczyły dowodów na to, że duże spożycie jaj nasila ryzyko sercowo-naczyniowe u osób ogólnie zdrowych. Jednak szereg badań sugeruje nasilenie ryzyka chorób sercowo-naczyniowych i zgonu z tego powodu u chorych na cukrzycę typu 2, spożywających duże ilości jaj. Wydaje się ponadto, że duże spożycie jaj przez osoby zdrowe może przyczynić się do ujawnienia się cukrzycy typu 2.

The necessity of reduction of eggs consumption is controversial since many years. Hypercholesterolemic effect of eggs is weak, however their high consumtion may increase postprandial lipemia and also the level of trimethylamine-N-oxide, the compound causing vascular toxicity. Results of cohort and clinical studies did not provide evidence that high eggs consumption enhances cardiovascular risk in healthy population. However, the number of investigations suggest increase in cardiovascular risk and death in type 2 diabetes subjects with high eggs consumption. Besides, it seems that high eggs consumption may contribute to type 2 diabetes development in healthy subjects.
