Most important food labelling systems used in the USA, Europe and Australia were reviewed. The lack of a unified approach in their elaboration was pointed out, despite the general assumption that they should enable consumers making conscious choice and serve their health. The decisive role of state institutions in elaborating labelling systems and the need for education of consumers was underlined. Public awareness, the issue of correct interpretation of consumer labelling and the impact of labelling on public health remain a problem. In turn, food producers are interested, that their products would not be stigmatized, because in their opinion this may have negative consequences for some food industry sectors. Therefore, there is a very large divergence of views of stakeholders on the labelling of food products and hence problems in the development of a uniform system. However, the role of the state authorities is crucial and the relevant governmental representatives must be responsible for their decisions.
