Histamine is a biogenic amine formed by the decarboxylation of histidine by microorganisms or by endogenous enzymatic pathways. Histamine is present in food of both plant and animal origin. While histamine content in food at low levels is not dangerous to human health, because it is detoxified in the body, an excess of it can cause food poisoning. The aim of this study was to evaluate the content of histamine in canned fish after opening and cold storage for one week at 4 °C. The highest content of histamine was noted after opening in fillets of mackerel in tomato sauce at 5.95 mg kg"1, while the lowest content was in mackerel in aromatized oil and in Greek carp at 0.78 mg kg'1. During cold storage, the histamine content in all the cans decreased. The lowest values were recorded for Greek carp at 0.39 mg kg"1 and for herring in oil in which no histamine was detected. These canned products meet EU directive requirements and are safe for the consumer.
Dopuszczalny maksymalny poziom histaminy w żywności pochodzenia morskiego należy monitorować z uwagi na udowodnioną jej toksyczność dla organizmu ludzkiego oraz wymagania przepisów prawa. W artykule oceniono zagrożenie wystąpienia histaminy w żywności pochodzenia morskiego na przykładzie ryb świeżych i przetworzonych. Porównano oznaczone poziomy histaminy w konserwach rybnych prowadzone w ramach badań monitoringowych w latach 2014-2016 z dostępnymi wynikami badań opublikowanymi w literaturze. W sumie przebadano 639 prób konserw, z czego 4,5% wykazało wynik pozytywny. Żaden z wyników oznaczenia histaminy nie był wyższy niż 50 mg/kg. Oznacza to stosowanie w badanym zakładzie przetwórczym surowca rybnego dobrej jakości oraz stosowanie skutecznych i efektywnych działań prewencyjnych w ramach systemu HACCP. Stwierdzono, że zagrożenie, jakim jest histaminy w konserwach rybnych jest nadzorowane oraz zależy m.in. od kompetencji personelu oraz skuteczności procedur HACCP.
Histamine is a product of the bacterial decarboxylation of the amino acid histidine, which occurs in fish tissues. The aim of the study was to determine the content of histamine in different canned fish (n = 80). The high performance liquid chromatography with diode array detection (HPLC-DAD) method was used. Histamine was detected in 17 out of 80 (21.3%) of the canned fish samples. The highest concentration of this biogenic amine was found in “herring in oil” (182.1 mg/kg).
