The aim of the present study was to establish the influence of raw and cooked (fresh and frozen) green cauliflower on some biochemical parameters (levels of total cholesterol, HDL, LDL and VLDL cholesterol and triacylglycerols) in rats. The experiment did not show any effect of cauliflower addition to diet on body weight of rats. The data indicated that AIN-93G diet containing 1% cholesterol increased the level of triacylglycerols and LDL + VLDL fractions in comparison with AIN-93 diet alone. Levels of total cholesterol were lower in animals fed the diet with addition of fresh cooked cauliflower as compared to rats given hypercholesterolemic diet with addition of raw vegetable.
The investigation covered broccoli, green cauliflower and Brussels sprouts. The evaluation concemed the raw material; the material after blanching; the material after cooking; and frozen products from blanched (traditional method) and cooked (modified method) material, stored at -20°C and -30°C then prepared for consumption using watercooking in the traditional method and thawing by microwave in the modified method after 0, 4, 8 and 12 months of frozen storage. Depending on the investigated sample, the vegetables prepared for consumption after 12 months of frozen storage retained total chlorophylls as follows: broccoli, 45-66% of the content in the raw material; green cauliflower, 30-45%; and Brussels sprouts, 66-78%. In comparison with the traditional method, the mean content of chlorophylls in Brussels sprouts obtained using the modified method was 16% higher; however, in broccoli the content was lower by 23% and in cauliflower by 21% on average. Lower storage temperature resulted in higher content of chlorophylls in all investigated vegetables.
Badano wpływ różnych dawek nawożenia azotowego w uprawie na zbiór jesienny kalafiora białego, zielonego i romanesco. Stosowano jednolitą dawkę 100 kg N·ha⁻¹ przedwegetacyjnie w postaci saletrzaku oraz zmienną pogłównie wynoszącą 50 kg, 100 kg oraz 150 kg N·ha⁻¹ w postaci saletry wapniowej. Oceniano jakość róż na podstawie ich średniej masy oraz udziału poszczególnych klas wielkości. Analizowano również strukturę plonu ogólnego oraz występowanie zaburzeń w rozwoju róży. Stwierdzono istotne zwiększenie średniej masy róży w plonie ogólnym i handlowym przy wyższych dawkach azotu, ale tylko u kalafiora białego. Porównywane formy różniły się znacząco pod względem tej cechy. Największe róże odnotowano u kalafiora białego, mniejsze u zielonego i najmniejsze u romanesco. Wysoki udział róż I wyboru uzyskano u kalafiora białego przy najwyższej, a zielonego średniej dawce azotu, wyraźnie niższy u romanesco. Róże o największej średnicy (powyżej 30 cm) wytworzyły wszystkie typy kalafiora pod wpływem najwyższego poziomu nawożenia. Największą liczbą defektów róż w postaci przerośnięcia liśćmi, omszenia, zbrunatnienia, czy występowania pustych kanałów łodygowych cechował się kalafior typu romanesco, mniejszą zielony, a najmniejszą biały. Zaburzenia wystąpiły w różnym nasileniu w kolejnych latach doświadczenia i pozostawały bez jednoznacznego związku z wysokością nawożenia azotowego.
