The studies of the applicability of headspace sampling coupled to mass spectrometry in discrimination of differently aged beers are reported. The entire mass spectra of headspace components provided “fingerprints” of the beer samples and were used for classification purposes. PCA analysis of the mass spectra revealed clustering of samples according to the aging procedure, allowing automated sample classification by appropriate chemometric methods.
This paper investigates the effectiveness of electronic nose with subsequent principal component analysis (PCA) treatment of data for differentiation of food samples of varied odour quality caused by lipid oxidation. Samples were evaluated for off-flavours with an electronic nose and a sensory analysis and for Totox value. Volatile compounds of fresh samples and samples subjected to storage test at 60°C were isolated with a static headspace technique. The results suggest that the electronic nose could help to supplement the sensory analysis. Models based on partial least-squares analysis were able to predict the oxidized flavour attribute of samples, with correlation coefficients ranging from 0.66 to 0.99. Based on elaborated methods and data treatment with PCA it was possible to distinguish between different food samples and monitor the formation of off-flavours associated with lipid oxidation.
The authors compared two methods of determining odour concentration under field conditions. Twelve series of odour measurements were carried out at a mink farm. Odour concentration was determined using a portable dynamic olfactometer (Nasal Ranger, St. Croix Sensory, Inc.) and by approximation using the psychophysical Weber-Fechner equation of S-logZ on odour intensity results. Odour concentrations were about 60 ou/m3 for both methods. Values of the ratio cod,WF/codNR were in the range of (0.2-5), which satisfies the requirements of EN 13725.
Zbadano wpływ substancji wywołujących wrażenia smakowe na przebieg oscylacji różnicy potencjału elektrochemicznego w oscylatorze z grubowarstwową membraną ciekłą, zawierającym kationowy surfaktant. Wyniki przeanalizowano sporządzając histogramy obrazujące zależność między częstotliwością a liczbą pików występujących na krzywych oscylacyjnych. Stwierdzono, że otrzymane charakterystyki oscylacyjne różnią się od siebie w zależności od rodzaju substancji odpowiedzialnej za wrażenia smakowe, należącej do jednego z czterech podstawowych rodzajów smaku (słodki, kwaśny, słony, gorzki).
