Runner bean (Phaseolus coccineus L.) is, after common bean (Phaseolus vulgaris L.), the second most important species, both around the world and in Poland. However, as compared to common bean, runner bean was not so well recognized, which is indicated by reports from literature. Among the most important values of this bean species are large and very large seeds (the weight of one thousand seeds: 900–3000 g), which, with respect to their nutritional value rival common bean seeds. There are forms of it that differ in plant growth type, morphological features of flowers, pods and seeds, as well as in the manner of use – green pods and for dry seeds. On the basis of world literature, results of the author’s own studies, as well as the studies conducted in Poland by her collaborators and other authors, the issues of development biology, agrotechnical and environmental requirements, flowering and pollination of this allogamous species were presented, as well as yielding, sensitivity to herbicides, effect of pathogenic factors upon generative organs, as well as chemical composition of runner bean seeds and pericarp (Phaseoli pericarpium).
The aim of present work was to evaluate the influence of extrusion parameters on chemical composition of seeds of five bean cultivars. Milled seeds were moisturized to 14% or 20%, and processed in single screw extruder at 120 or 180°C. On raw material and extrudates the following analyzes were performed: protein, lipids, TDF, SDF and IDF content. Also content of starch, ash and mineral compounds was analyzed. The content of analyzed compounds in 100g of dry basis of not processed bean varied depending on cultivar, in the range: 23.9–29.8 g of protein, 1.54–1.78 g of lipids, 59.9–68.4 g of total carbohydrates, 32.2–39.6 g of starch, 20.6–24.5 g of TDF and 3.81–4.21 g of ash. After extrusion the content of these compounds was as follows: 23.8–30.2 g of protein, 1.41–1.82 g of lipids, 53.1–60.7 g of total carbohydrates, 28.7–35.0 g of starch, 3.64–4.03 g of ash and 19.5–23.8 g of TDF. Extrudates obtained from higher moisture raw material had higher content of lipids, total carbohydrates and insoluble dietary fiber in comparison to extrudates from lower moisture raw material. Except higher moisture also lower temperature of process influenced of better preservation of mentioned above components. There was no significant influence of extrusion parameters on minerals content.
In the years 2003-2005 valorization of common bean (Phaseolus vulgaris L.) for dry seeds was carried out. They came from the area of: Augustów, Łomża, Sokołów, Tarnów i Przemyśl. The valorization included following charcters: beginning of the flowering, length of the flowering period, time until full usable and physiological ripeness, plants height, height of setting of the first pod, numbers of pods with seeds per plant, seed yield per plant, numbers of seeds per pod, length and width of pod, weight of 1000 seeds, shape and colour of seed. No differences were found among the following traits: beginning of flowering, length of the flowering period, time until full usable ripeness, plant height and seed yield per plant. The biggest variability was found for a width of pod and weight of 1000 seeds. The evaluated cultivars also differed in the shape and seed colour.
