The changes of intercellular trehalose contents and surviving of baker yeast different races were researched. After introductory rearing of yeast the contents of trehalose amounted on the level 11,6-14,5%. After liophilizing the contents of trehalose and surviving of the yeast was researched after 2, 4, and 6 weeks of keeping. After 6 weeks the contents of trehalose on the level 5,&-7,4% and surviving of yeast cells on the level 40,7-51,0% were stated. The results were satisfactory. Analysis of results makes possible to create the mathematical model as polynomial of III degree, with variable coefficients dependent on the yeast races, which allows making prognosis of the trehalose contents and surviving of the yeast during the keeping.
