The natural cationic polymer chitosan can successfully flocculate yeast cells, reducing the turbidity of their suspension by more than 90%. The optimum chitosan dose for flocculation decreased as the charge density of the polymer increased. Flocculating effectiveness of chitosan in terms of turbidity reduction, floe size and floe strength increased with polymer molecular weight.
