The effect of dehydration in saccharose or starch medium at 30°C and 80°C on the kinetics of convection drying of apples (Idared or Lobo variety) was studied. Osmotic pre-treatment was shown to cut down the drying time of apples with the dry weight moisture content of about 3 g H20/g after dehydration. The water removal rate during drying decreased independent of the degree of dehydration in either saccharose or starch medium. The type of osmotic solute did not affect the kinetics of convection drying of 30°C-dehydrated apples with the dry weight moisture content of 7 g H20/g, 5 g H20/g and 3 g H20/g. The convection drying rate of 80°C-dehydratyed apples increased by 20-30% compared to raw apples. Hie Lobo apples both raw and osmodehydrated at 30°C lost water more easily during convection drying than Idaret apples.
