Celem podjętych badań była ocena efektywności chowu i produkcji mleka pięciu ras bydła, z uwzględnieniem systemu produkcji. Badaniami objęto 69 gospodarstw rodzinnych z terenu wschodniej Polski utrzymujących krowy mleczne, które podzielono na 6 grup w zależności od rasy krów (polska holsztyńsko-fryzyjska, simentalska, polska czerwona, białogrzbieta, polska czarno-biała) i stosowanego systemu produkcji mleka (intensywny, półintensywny, ekstensywny). Wyliczono strukturę kosztów i przychodów oraz dochód z chowu bydła. Koszty jednostkowe oraz dochodowość określono w przeliczeniu na jedną krowę i jeden kg mleka. Rachunek kosztów jednostkowych wykonano według metodyki stosowanej w systemie FADN. Wykazano, że oba analizowane czynniki, tzn. rasa i system produkcji, miały znaczący wpływ na efektywność chowu bydła. W przypadku ras międzynarodowych podstawowym czynnikiem wpływającym na dochodowość była skala produkcji mleka oraz jej koszt, natomiast przy utrzymywaniu ras lokalnych o dochodzie decydowało maksymalne wykorzystanie pomocy unijnej.
The aim of this study was to assess the effect of the feeding season and the quantity of concentrates served on the course of rumen fermentation in dairy cows. The research included 42 cows (21 heads in summer and 21 heads in winter) of the black-and-white variety of the Polish Holstein-Friesian breed, aged from 2 to 5 years (lactations I-III) with an average milk yield per lactation of approximately 7,000 kg. The animals were kept in a tether barn. Rumen content was collected four times, i.e. at the beginning of lactation and in the second half of lactation, both in the period of winter and summer feeding. A total of 84 samples of the rumen fluid were collected (42 samples in winter and 42 samples in summer). The samples were collected no later than 2 hours after the morning feeding by means of a stomach tube fitted with a Sorensen vacuum pump. During the winter feeding, the content of butyric acid in the pool of volatile fatty acids increased by 27%, and the production of volatile fatty acids was higher by 8%. Furthermore, an increased efficiency of microbial growth was noted without any significant change in fermentation performance. The application of a dose with a high share of concentrates significantly (p ≤ 0.05 and p ≤ 0.01) influenced the course of rumen fermentation, resulting in increased volatile fatty acid production, a higher rumen fermentation yield, and a greater efficiency of microbial growth, in both winter and summer. A large dose of concentrates also led to significant changes in the direction of fermentation by reducing the NGGR rate by 13-19% and narrowing the ratio of acetic acid to propionic acid (p ≤ 0.05 and p ≤ 0.01). In conclusion, it should be stated that the quantity of concentrates served was the most important factor affecting the course of rumen fermentation in dairy cows.
Badania przeprowadzono w 74 gospodarstwach rodzinnych z regionu Podkarpacia. Informacje do pracy były zbierane bezpośrednio w gospodarstwach, poprzez wywiad, z wykorzystaniem przygotowanego kwestionariusza. Uzyskane wyniki wskazują na to, że wraz ze zwiększającą się powierzchnią gospodarstw zwiększała się ich siła ekonomiczna i organizacyjna wyrażająca się większą nadwyżką bezpośrednią oraz wyższą obsadą zwierząt (DJP). W gospodarstwach mniejszych, o zwierzęco-roślinnym profilu produkcji, charakterystycznych dla Podkarpacia (grupy II-IV), potencjał rozwojowy był wysoki. Gospodarstwa te posiadały jeszcze zasoby ziemi i zwierząt, które powinny być wykorzystane do produkcji żywności. O ich dalszym rozwoju będą decydować głównie czynniki makroekonomiczne oraz podejmowane przez rolników decyzje o sposobie gospodarowania. Jednak należy podkreślić, że zaniechanie produkcji zwierzęcej lub jej ograniczanie (rezygnacja z wypasu pastwiskowego, mniejsza obsada zwierząt) będzie przyczyniało się do wzrostu powierzchni nieużytków, głównie zielonych, trudnych do zagospodarowania w innym kierunku.
The aim of study was to evaluate the chemical composition, including mineral content, in milk of different breeds maintained in organic and traditional farms using intensive (PMR) and traditional feeding systems. The study was carried out on 47 farms in south-eastern Poland. A total of 735 milk samples were analysed, including 263 from cows raised on organic farms, 218 from cows raised on conventional farms using a traditional feeding system, and 254 from cows raised on conventional farms using an intensive feeding system (PMR). All types of farms raised Polish Holstein-Friesian and Simmental cows, and the conventional farms using a traditional feeding system also kept Polish Red and White-Backed cows. The highest (p ≤ 0.01) daily milk yield and content of protein, lactose, dry matter and urea in the milk were obtained from the cows fed in the PMR system. The highest fat content was noted for the milk from the conventional farms using a traditional feeding system. The animals raised in the organic system produced the least milk, with the lowest concentrations of its basic nutrients. The highest mineral content was noted for the milk from the traditional system. The milk from the organic system contained the least Ca, Na, Mg, Zn and Fe, while the milk from the intensive system contained the least Mn. The content of Cu was similar in the milk from the organic and intensive systems and lower (p ≤ 0.01) than in the milk from the traditional system. The results of two-way analysis of variance indicate that the breed of cow significantly influenced milk yield, protein content, protein-to-fat ratio, Ca and Zn concentration (p ≤ 0.01), and the content of dry matter, Fe and Mn in the milk (p ≤ 0.05).
Analizowano skład chemiczny oraz wartość pokarmową pasz objętościowych wykorzystywanych w opasie 60 buhajków w 2 gospodarstwach z terenu wschodniej Polski. Oceniano przyrosty dobowe opasanych zwierząt oraz masę tuszy i wydajność rzeźną. Wykazano, że w obu gospodarstwach skarmiano dobre jakościowo pasze objętościowe, przy czym w gospodarstwie I ich zestaw był szerszy, ponieważ obok zielonki, siana i kiszonki z kukurydzy podawano tam także sianokiszonkę. Nieco lepszą zielonkę z traw skarmiano w gospodarstwie I, zawierała ona bowiem 107,4 g BTJN i 97,6 g BTJE w porównaniu do 94 g BTJN i 91 g BTJE w zielonce z gospodarstwa II. Porównywalną wartość pokarmową miały stosowane w obu gospodarstwach kiszonki z kukurydzy, natomiast lepsze siano skarmiano w gospodarstwie II. Średnie dobowe przyrosty masy ciała dla całej ocenianej stawki zwierząt w okresie opasu kontrolnego wynosiły 892 g, przy czym w gospodarstwie I były one istotnie wyższe, tj. 922 g w porównaniu do 875 g w gospodarstwie II (P≤0,05). Buhajki z gospodarstwa I uzyskały również nieznacznie wyższą wydajność rzeźną ciepłą (53,3%) w stosunku do zwierząt z gospodarstwa II (52,57%). Wykazana różnica była jednak statystycznie nieistotna.
