Nitrate and nitrite levels were determined in three varieties of food grains. Nitrate in cereals varied from 120.0 in rice to 1000.0 mg/kg in maize, while nitrite was from 0.026 in rice to 0.106 mg/kg in maize varieties. Their levels in cowpea varied between 710 and 1845 mg/kg for nitrate and 0.033 and 0.062 mg/kg for nitrite. On cooking, nitrate levels decreased in maize and cowpea varieties while an increase occurred in the rice samples. Nitrite levels increased in all the food grains on cooking. Daily intake estimates indicate that the nitrate and nitrite contents of the food grains seem to satisfy the current acceptable daily intake.
Limitations of protein supplies make the hunt for new protein sources and their quality evaluation necessary. Ukpa seeds, a variety of lima beans (Phaseolus lunatus), was biochemically evaluated. Analysis on fresh weight bases gave crude protein content of 23.17 g/100 g, true protein value of 19.57 g/100 g and appreciable amounts of total carbohydrates (71.14 g/100 g) and minerals comparable to commonly consumed staples. Crude fat content was 0.21 g/100 g while those of total sugar and starch were 4.48 and 67.72 g/100 g respectively. Levels of trypsin inhibitor, phytic acid and oxalate were not striking but comparable with other conventional food sources. However, polyphenols were not detected in the seeds, which could be a nutritional advantage. While marginally limiting in S-containing amino acids (Cyst + Meth) (score 90.4), other indispensable amino acids (IAA) were at higher than adequate concentrations and easily satisfied the recommended requirements. It was concluded that ukpa seeds represent a potential source of protein and energy that could alleviate shortages, and efforts towards the domestication, multiplication and conservation of this indigenous variety should be pursued.
The nutrient composition of some neglected and less familiar plant seeds was studied. The seeds showed wide variation in constituents and could be compared with commonly consumed food articles. The protein content ranged írom 29.2 g /kg in Callitris intratropica to 253.5 g/kg in Percopsis elata, while the carbohydrate content was found to be between 330.5 g/kg and 734.8 g/kg in P. elata and Dracena mannii, respectively. The highest fat and fibre content of 215 g/kg and 290.5 g/kg occurred in P. elata and C. intratropica, respectively. P. elata, D. mannii and C. intratropica promises a good source of protein, carbohydrate and fibre, respectively. The legumes showed high ash content but most seeds were rich in Mg, K and F and defficient in Na and Cu. Investigation of the antin utrients and possible toxic effects of the seeds is necessary before their full utilisation.
