The article discusses the topics of lectures and posters presented at the 10th National Scientific Conference of fruit and vegetable processing technologists. The conference was attended by 91 participants representing 12 universities and research institutes and 18 companies and organizations. During the two days of the conference 30 papers were presented in four thematic sessions and 35 posters. The conference covered a whole range of issues, with particular emphasis on the nutritional value of fruit and vegetables and processed foods and innovation in processing.
Analizowano zmiany zawartości składników cukrowych w trakcie odwadniania osmotycznego wiśni w celu określenia proporcji między zawartością cukrów w produkcie końcowym a ilością cukrów pochodzących naturalnie z surowca. Owoce ośmiu odmian wiśni poddawano odwadnianiu osmotycznemu w 60-procentowym roztworze sacharozy i suszono konwekcyjnie. Analizę ilościową i jakościową cukrów wykonano metodą HPLC w surowcu mrożonym, odwodnionym oraz w suszu. Dominującymi cukrami w surowcu była glukoza (46–61%) i fruktoza (34–39%). Wiśnie zawierały też 12–20% sorbitolu. Proces odwadniania spowodował przyrosty fruktozy oraz spadki zawartości sorbitolu; zmiany zawartości glukozy nie były jednoznaczne. W sezonie 2009 w owocach odwadnianych stwierdzono obecność 2–20 g·100 g–1 s.s. sacharozy, która podczas suszenia konwekcyjnego w całości uległa hydrolizie. Zmiany pozostałych składników na etapie suszenia były relatywnie niewielkie. W ogólnym ilościowym bilansie składników cukrowych stwierdzono zaledwie 11-procentowy wzrost ich zawartości w suszu w stosunku do surowca, wykazano natomiast znaczące zmiany składu jakościowego. Z surowca tracony był sorbitol na rzecz znacznego wzrostu zawartości fruktozy.
Artykuł przedstawia skład polifenolowy owoców dziesięciu odmian pigwy oraz ich właściwości przeciwutleniające. W owocach oznaczono zawartość podstawowych grup polifenoli: flawan-3-oli, kwasów fenolowych oraz flawonoli z zastosowaniem metody wysokosprawnej chromatografii cieczowej. Dominującymi związkami we wszystkich odmianach pigwy były polimery procyjanidyn (2299-4426 mg/kg) o stopniu polimeryzacji 13,9-23,6. Zawartość kwasu neochlorogenowego wynosiła 281-718 mg/kg, kwasu chlorogenowego zaś 175-509 mg/kg. Potwierdzono, że owoce pigwy charakteryzują się dużą zdolnością zmiatania wolnych rodników, która jest silnie dodatnio skorelowana z sumą związków fenolowych. Obliczono współczynnik korelacji pomiędzy aktywnością przeciwutleniającą a zawartością kwasu neochlorogenowego, który wynosił R2 =0,8394, a procyjanidynami (R2 = 0,7056). Spośród badanych odmian pigwy najwyższą zawartość związków fenolowych miały odmiany Cesar, Ronda, Vrarija i Marija.
W pracy podano przykłady zaleceń dotyczących spożycia owoców i warzyw w kilku krajach UE, ze szczególnym uwzględnieniem diety śródziemnomorskiej. Wskazano na różnice dotyczące zalecanych proporcji spożycia różnych produktów i zmianę podejścia ds. żywienia wraz z rozwojem nauki o żywieniu. Zwrócono uwagę, że niezbędnych składników odżywczych dostarczają też przetwory owocowe i warzywne. Wraz z postępem wiedzy i wzrastającej świadomości konsumentów dotyczącej diety i zdrowia ważna jest reformulacja produktów przetworzonych, w celu m.in. ograniczenia spożycia cukru.
The aim of the study was to examine the possibility of processing red-fleshed apples into cloudy juices. In a series of experiments on laboratory and semi-technological scale, the effect of enzymatic treatment of the pulp, an addition of ascorbic acid, centrifugation of the must and storage conditions on the physicochemical quality of the finished juice were investigated. The following red-fleshed apple cultivars were used: „Trinity”, „Maypole”, „Alex Red”, and as the control: „Shampion” and „Idared” cultivars. Studies have shown that an addition of ascorbic acid during pressing, in the amount of 500–100 mg kg⁻¹ of pulp, increased anthocyanins extraction into juice and prevented their oxidation. The enzymatic treatment of the pulp did not affect the pressing yield, and adversely affected the content of phenolic compounds and antioxidant activity. It was found that due to the rapid degradation of anthocyanins the red-fleshed apple juices should be stored at low temperatures.
The obtained results confirm that blue honeysuckle fruits are a rich source of anthocyanins and total polyphenols and are characterized by high antioxidant activity. By using modern drying methods, including microwave-vacuum drying, fruit perfectly maintains its health-promoting values. Convection drying adversely affected the content of L-ascorbic acid and anthocyanins. Considering the health values of haskap and the possibilities of its use in the fruit and vegetable industry, and the growing production area in Poland, it can be concluded that this is a very promising species of berry plants
Taking into consideration the growing importance of the smoothies market, in an carried out experiment, six cultivars of apples were characterized as well as obtained from them semi-finished products, it is cloudy juices and purees. Quality parameters important for processing were covered as well as the content of bioactive ingredients, including pectic substances and phenolic compounds. From the point of view of the smoothies quality the use of cultivars with a low tendency to enzymatic browning should be considered, but preferably rich in phenolic compounds and pectic substances, which are advantageous considering the viscosity of the product. Using a material with an appropriate degree of ripeness organoleptically acceptable product could be obtained from each tested apple cultivar. However, taking into account the possibility of the use of a health claim concerning the ascorbic acid (KA) preference should be given to ‘Szampion’ and ‘Topaz’, characterized by a low tendency to enzymatic browning, with a high content of phenolic compounds and high content of KA in the final product.
In recent years, the interest in Saskatoon berry (Amelanchier) fruit production in Poland has increased considerably. One of the challenges for this species production development is to identify some effective methods of fruit preservation, as they are highly perishable. The results of preliminary research conducted at the Research Institute of Horticulture, which aim in determination of the suitability for processing of selected varieties of the species, produced in the climatic conditions of southern Poland, are presented in the paper. The scope of the study included quality characteristics of the raw material and its usefulness in the production of purées, as well as the possibility of preserving the fruit with the use of innovative drying techniques. The results confirm the possibility of using the fruits of this species for the production of preserves in terms of preserving healthy properties, which can be considered as a valuable ingredient for innovative food products.
