The objective of the study was to analyse the knowledge and opinions of students on additives used in food production. The studies were conducted in 2010 with a survey methodology using a questionnaire among 215 students from the University of Warmia and Mazury with a varied socio-demographic profile. The statistical analysis of empirical material included the analysis of frequency distribution of the recorded responses and the evaluation of the significance of the impact of the socio-demographic features on the investigated phenomena. chi-square test of Statistica 9.0 software (StatSoft Inc., USA) was applied to compare the data. It was demonstrated that the majority of respondents paid attention to the presence of additives in food products. By analyzing the results of students opinions on additives, it was shown that the highest proportion of respondents indicated that the use of additives was rather necessary. The knowledge of the purpose of adding preservatives, aromatizing compounds and stabilizers to food was predominantly correct among students. It was observed that the knowledge of antioxidants was smaller. Among a substantial proportion of the respondents, there were some fears on the use of additives. The existing fears may indicate a need for a wider informative approach towards consumers.
Background. Food less frequently used to provide the necessary nutrients for the survival and the body begins to play a role, which it is not able to cope with, leading to a dysfunctional its use. In an era of obesity, excessive interest in his appearance and lean silhouette assigning too much significance relates to a growing number of young women. Young women due to a period of their procreative years are particularly vulnerable to the consequences of abnormal eating habits that threaten the health of women and their offspring. Objectives. In young women of reproductive age, to determine the emotional and habitual reasons behind binge eating and the effect that restriction diets can have for achieving desired body mass in relation to physical activity and the willingness to improve their weight. Material and methods. Subjects surveyed were 372 women aged 18 to 27 years (mean 20.6 ± 1.4) who answered a questionnaire on dietary behaviour devised by Ogińska-Bulik and Putyński [21] which had been extended to include body mass perception/image, adoption of slimming diets, levels of physical activity and place of residence. The women’s actual body mass, height and body fat (adipose tissue content) were also measured. Results. Most subjects (63.9%) were dissatisfied with their figures whilst 33.5% underwent slimming diets at least once. Those overweight, complained much more about their figures compared to normal weight women (97.9% vs. 65.1%, p<0.01), as well as being respectively more emotionally prone to overeating (4.5 ± 2.2 vs. 5.2 ± 2 points round, p <0.01), but less for adopting any dietary restriction (3.5 ± 2.7 vs. 4.8 ± 2.3, p <0.01). Conclusions. It seems necessary to create a prevention and educational programs on proper nutrition and the perception of one’s own body as effective tools in reducing eating disorders in terms of the health of young women and multigenerational inheritance health of their offspring.
The aim of the study was to analyse the differences in the consumption frequency of fruit juices and sweetened beverages according to gender, age and the prevalence of overweight. The study involved 1,700 adolescents aged 13-19 from north-eastern Poland. The frequencies of juices and beverages consumption are presented in 5 categories: from less than once a week to daily. On the basis of measurements of body weight and height the relative body mass (rBMI) is calculated, using standardization by Cole. The study showed that 77.8% of the sample had normal weight and 16.9% were overweight. Girls more often consumed fruit juices than boys and sweetened beverages less often. Girls with age drank less frequently fruit juices and sweetened beverages. Among boys, only the frequency of fruit juice consumption decreased with age. Daily consumption of sweetened beverages among young people increased the risk of being overweight by more than 60% compared to young people consuming them once a week. The frequency of consumption of fruit juices and sweetened beverages was more strongly related to age and sex than to body mass. The prevalence of overweight among adolescents was associated with the frequency of sweetened beverage consumption, but not with the frequency of fruit juice consumption.
