W artykule dokonano charakterystyki metody utrwalania żywności technologią radiacyjną. Przedstawiano zagadnienia dotyczące wpływu napromieniowania na wartość odżywczą oraz bezpieczeństwo mikrobiologiczne utrwalonego produktu żyw¬nościowego. Ponadto dokonano analizy porównawczej omawianej metody z tzw. konwencjonalnymi metodami konserwacji żywności.
W artykule przedstawiano zagadnienia dotyczące wpływu napromieniowania na wartość odżywczą oraz bezpieczeństwo mikro­biologiczne utrwalonego produktu żywnościowego.
Background. Nutritional disorders constitute a significant clinical problem in the 21st century. The problems of overweight and obesity concern not only adults, but are also increasingly affecting developing children. Material and methods. The study was conducted among parents of children aged 10-13 years. Based on the data obtained from questionnaires distributed to the parents, body mass index (BMI) and degree of nutrition was determined and the influence of socio-demographic factors on the nutritional status of children was analyzed. Results. This study found that approximately 16% of children aged 10-13 are categorized as overweight, and 26% are categorized as obese. Place of residence has a significant effect on the BMI of included children, with those living in a country being characterized by a significantly lower BMI compared to those living in a town or city (p=0.008). Children whose parents are overweight or obese are characterized by a higher BMI compared to children whose parents are not overweight or obese (p=0.001). Conclusions. This study shows that the presence of overweight or obesity in a parent is correlated with a higher BMI in their children. In addition, children living in the countryside have a significantly lower average BMI compared to children living in a town or city.
Żwirska-Korczala K., Buntner В., Sobieraj H., Ostrowska Z., Kniażewski B. and Świętochowska E.: Serum ferritin, iron and transferrin in women with thyrotoxic Graves’ disease before and after methimazole treatment. Acta physiol, pol., 1990, 41 (2): 166-166. We investigated iron metabolism in 47 women with thyrotoxic Graves’ disease. Serum iron, ferritin, transferin, triiodothyronine and thyroxine concentrations were RIA measured before and after methimazole treatment when patients became euthyroid. The control group consisted of 52 healthy women. We noted that serum ferritin levels and the ferritin to transferrin ration were significantly lower while the iron to ferritin ratio was higher in patients before and after methimazole therapy. Iron concentration as well as the iron to transferrin and the iron to thyroid hormone ratios were decreased only before treatment.
Liver ischaemia and reperfusion (IR) injury is a significant clinical problem. The aim of our study was to investigate the protective effect of tumor necrosis factor-alpha (TNF-) on rat liver ischaemia-reperfusion injury. A TNF- dose of 3 µg/kg body weight was injected into rats that had undergone partial (70%) ischaemia and reperfusion. The activities of alanine aminotransferase (ALT) and aspartate aminotransferase (AST), total blood antioxidant level (using the FRAP test), and the concentrations of TNF-, myeloperoxidase (MPO) and malondialdehyde (MDA) in liver homogenates after 1, 6, and 72 hours of reperfusion were measured. It was demonstrated that, rats subjected to IR, the administration of small doses of TNF- significantly reduced ALT and AST activities after 60- minute liver ischaemia and 1 or 6 hour of reperfusion. The strongest reductions in ALT and AST activities were seen after 1 hour of reperfusion (30% and 35%, respectively). Exogenous TNF- reduced the release of this cytokine in all observed periods, with the greatest reduction observed after 1 hour of reperfusion. Decreases in MPO concentration (by 40-45% in all periods of observation), as a marker of hepatic neutrophil infiltration, and in MDA concentration, the end-product of lipid peroxidation (by 55-60% at all time points), accompanied the reduction of TNF- release. The administration of TNF- to the rats after IR did not alter total plasma antioxidant potential, as assayed by the FRAP test, after 1 hour of reperfusion; however, at the later times a marked increase (~ 40-50%) occurred. We demonstrated that intraperitoneal injections of small doses of TNF- protect rat livers from IR injury. The mechanism of this protection is related to reductions in the release of TNF- during IR after injection of this cytokine, resulting in reductions in oxidative stress and inflammation during the later phase of reperfusion.
