Wiele substancji o aktywności antagonistycznej względem drobnoustrojów chorobotwórczych oraz powodujących psucie się żywności może być wykorzystywanych do tworzenia opakowań o działaniu przeciwdrobnoustrojowym. Komponentami takich opakowań może być szereg naturalnych i całkowicie bezpiecznych dla człowieka związków otrzymywanych z surowców roślinnych, zwierzęcych lub wytwarzanych przez mikroorganizmy. Do nadawania opakowaniom aktywności przeciwdrobnoustrojowej mogą być także wykorzystywane związki otrzymywane na drodze syntez chemicznych. W gronie substancji przeciwdrobnoustrojowych badanych pod kątem przydatności do tworzenia opakowań aktywnych jest wiele dobrze znanych i powszechnie stosowanych konserwantów żywności. Opakowania aktywne mogą być też wytwarzane ze składników o naturalnej aktywności przeciwdrobnoustrojowej, takich jak np. chitozan. Najbardziej atrakcyjnymi dodatkami do opakowań przeciwdrobnoustrojowych przeznaczonych do żywności są substancje działające antagonistycznie na chorobotwórcze bakterie z rodzaju Salmonella, Listeria, Staphylococcus, Clostridium, E. coli O157:H7 oraz toksynotwórcze pleśnie.

There are a considerable number of antimicrobial substances with the capacity to decrease the growth of pathogenic strains found in food and which may be successfully introduced to packaging materials. It appears that many natural substances derived not only from plants and animals, but also from microorganisms, can be used as compounds in so-called antimicrobial packaging, as well as that many products of chemical synthesis have been proven to decrease microbial growth. Moreover, many traditional food preservatives are likewise being investigated in terms of their feasibility for antimicrobial packaging. Natural compounds, such as chitosan, seem appropriate for producing active packaging films. However, the most promising antimicrobial agents introduced into the aforementioned packaging are those that have antagonistic activity against pathogenic bacteria such as Salmonella sp., Listeria sp., Staphylococcus, Clostridium, E. coli O157:H7 and toxin-producing molds.
