Procesy biotechnologiczne są zaliczane do atrakcyjnych kierunków zagospodarowania i przetwarzania serwatki. Serwatka jako produkt uboczny jest tanim substratem dla różnych procesów i jednocześnie jest bardzo cenna ze względu na swój skład. Dobranie odpowiednich mikroorganizmów, mających zdolność do przekształcania składników zawartych w serwatce (głównie laktozy), oraz właściwych warunków procesu pozwala na uzyskanie wartościowych produktów wykorzystywanych najczęściej w przemyśle spożywczym i farmaceutycznym.

Biotechnological methods are an attractive direction of whey utilisation and processing. Whey, as a by-product, is a cheap substrate for different processes and at the same time it is very valuable on account of its composition. The selection of appropriate microorganism, which have the ability to transform the components contained in whey (mainly lactose), and proper technological conditions allows valuable products to be obtained which are used most frequently in the food and pharmaceutical industries.
