Parameters of carcasse dressing percentages in two seasons: winter (I—III) and summer (IV—IX) were examined accepting as live weight of animal a net weight at a purchase unit, weight at a time of admission of animals to slaughter horse and weight of animals just before slaughter. It was also evaluated a yield of meat, fat, tendons and bones. It was found that in winter a carcasse dressing percentage is higher by about 3,5% than that in summer. In winter carcasses are much more overfeted but a proportion of meat bones is constant.
