The article presents analysis of factors influencing the level of industrial production of pork and beef meat in Poland. The author shows the changes in the amount of production and purchase of livestock and the meat consumption within the years 1994 and 2003. In the empirical part of the article there is a statistical verification of mentioned relations. Two econometric models were built: for pork meat (WP model) and for beef meat (WL model). For the model estimation the method of multiple regression was used. This model was chosen, which adjusted R2 was the highest. The results confirmed to much extent that the meat industry is influenced by both supply factors (the situation on the raw material market) and demand factors (the meat consumption).
