W niniejszej pracy przedstawiono ogólną charakterystykę wewnątrzkomórkowych peptydaz LAB, które biorą udział w degradacji kazeiny. Scharakteryzowano następujące grupy: endopeptydazy (PepO, PepF), główne aminopeptydazy (PepN, PepC), specyficzne aminopeptydazy (PepA, Pcp, PepM, PepL), prolino-specyficzne aminopeptydazy (PepX, PepI, PepR, PepQ, PepP), tripeptydazy (PepT) i dipeptydazy (PepV, PepD). Opisano wiele wewnątrzkomórkowych peptydaz, które zostały wyizolowane, oczyszczone i scharakteryzowane dokładniej pod względem cech biochemicznych.

In this study presents the general characteristics of intracellular peptidases of LAB, which are involved in the degradation of casein. The following groups were characterized: endopeptidases (PepO, PepF), general aminopeptidases (PepN, PepC), a specific aminopeptidases (PepA, Pcp, PepM, PepL), proline-specific aminopeptidases (PepX, PepI, PepR, PepQ, PepP), tripeptidases (PepT) and dipeptidases (PepV, PepD). Described many intracellular peptidases which have been isolated, purified and accurately characterized in terms of biochemical features.
