Celem badań było określenie wpływu wieku i systemu utrzymania kur nieśnych na jakość jaj spożywczych. Badaniami objęto jaja o białej skorupie, pochodzące od niosek towarowych Hy-Line White utrzymywanych w systemie ściołowym i klatkowym. Określono masę jaja [g], barwę skorupy [%], wysokość białka [mm], jednostki Haugha [jH], intensywność barwy żółtka w skali La Roche’a [pkt], a także masę [g], grubość [µm] i gęstość skorupy [mg/cm²] oraz jej wytrzymałość [kG], elastyczne odkształcenie przy nacisku 1 kG i 2 kG [µm] i [%] i odkształcenie maksymalne w momencie pęknięcia skorupy. Badania przeprowadzono w 19., 26., 32., 46. i 56. tygodniu życia niosek. Na podstawie uzyskanych wyników stwierdzono, że wiele cech jakości jaj oraz skorupy zmienia się wraz z wiekiem kur. W miarę wydłużania się okresu nieśności wzrosła masa jaja, masa żółtka i masa skorupy oraz pogorszyła się jakość białka i wytrzymałość skorupy. Jaja od kur utrzymywanych w klatce charakteryzowały się nieznacznie wyższą masą oraz większą wysokością białka i wartością jednostek Haugha, lecz nie stwierdzono istotnego wpływu systemu utrzymania na badane cechy.

The aim of this study was to determine the effect of age and housing system of laying hens on the quality of table eggs. The studies involved white shell eggs from commercial layers Hy-Line kept on litter or caged. Egg weight [g], shell colour [%], albumen height [mm], Haugh units, La Roche yolk colour intensity [pts.], shell weight [g], thickness [µm], density [mg/cm²], strength [kG], deformation at 1 kG and 2 kG [µm] and [%] and maximum deformation at shell breaking were determined. The studies were carried out at 19, 26, 32, 46 and 56 weeks of age. It is concluded from the results that many egg quality and shell traits change with age of the hens. As the laying period went on, the weight of egg, yolk and shell increased and albumen quality and shell strength decreased. Eggs from caged hens were characterized by slightly higher weight and greater albumen height and Haugh units, although the influence of the housing system on the experimental traits was not significant.
