PL
Czynnikami, za pomocą których można nadawać opakowaniom aktywność przeciwdrobnoustrojową jest wiele związków chemicznych. Związki te mogą być wbudowywane do opakowań (folii i filmów jadalnych) w trakcie produkcji lub stosowane do powlekania ich powierzchni. Można je również immobilizować na polimerach za pomocą wiązań jonowych lub kowalencyjnych. Dobrze opracowane i przebadane opakowania z substancjami przeciwdrobnoustrojowymi zmniejszają stopień mikrobiologicznego zakażenia powierzchni produktów oraz ograniczają rozwój niepożądanych drobnoustrojów podczas transportu i przechowywania. Stosowanie substancji przeciwdrobnoustrojowych jako dodatków do opakowań pozwala na lepsze wykorzystanie ich konserwujących właściwości.

There is a wide range of chemicals that may impart antimicrobial properties to packaging materials. Antimicrobial substances can either be incorporated during the production process into the packaging itself, (foils and edible films) or coated as a thin layer on the surface of the packaging. They may likewise undergo immobilization on polymers via an ionic or covalent bonds. Thoroughly elaborated and investigated antimicrobial packaging materials have proven to decrease contamination of food surfaces and also limit the growth of undesirable microorganisms during transport and storage. Including antimicrobial substances as an integral part of the packaging enables a more efficient usage of their properties.
