Some results of investigations on improvement of the fermentation process of molasse worts are presented. Tests of authors on suitability of new yeast hybrids for fermentation at a lowered pressure proved that the best results were obtained at application of the CG525, OG/100, OG/62 and OG/77 hybrids. The fermentation development and the content of by-products is affected also by the process running way - better proved to be the method of dosing molasse in relation to the periodical fermentation.
