Oznaczono zawartość azotanów (V) i azotanów (III) w racjach pokarmowych uczniów szkół ponadpodstawowych ( 16-20 lat) mieszkających w internatach. Zawartość azotanów (V) kształtowała się w zakresie 40-524,2 mg NaNO3/rację (średnia 207,2 mg), a azotanów (III) - od 0,0 do 33,7 mg NaNO2 (średnia 8,6 mg). W 19% badanych racji został przekroczony dopuszczalny poziom tych związków.

Nitrate and nitrite content in the daily food rations of the 16-20-year youths receiving their meals at 3 selected boarding-school canteens in Cracow was estimated. Samples were collected during 7 consecutive days in autumn 1998. At the same time, intake of the individual products was analysed using canteen's store reports and menu data. The total number of the youths participating in the study was 758. The content of nitrates ranged from 40 to 306 mg NaNO3/ration (mean 207.2 mg/ration), while that of nitrites was from 0.0 to 33.7 mg NaNO2/ration (mean 8.6 mg/ration). The levels detected in the studied population were rather low and the admissible limits were exceeded only in 19% samples. The detected variations in nitrate and nitrite content between the days of the week and the individual canteens were associated with the products used to prepare the meals and with the size of the food rations.
