Effects of L-ascorbic acid and its derivatives and of the oil obtained from the Oenothera paradoxa seed on bacterial growth in the substrate were studied. Considerably rancid Oenothera paradoxa oil was noted to inhibit bacterial growth. Oil-soluble L-ascorbic acid derivatives: 6-O-palmitate and 2,6-0- dipalmitate added to the substrate with 10% Oenothera paradoxa oil stimulated bacterial growth more than the L-ascorbic acid. This might indicate that the antioxidants affect fat rancidification rather than the bacterial cell itself, thereby protecting cells from the destructive action of lipid peroxidation products.
