W podstawowej grupie produktów spożywczych jaką stanowią przetwory zbożowe oznaczono śladowe zawartości selenu wykorzystując metody spektralne z zastosowaniem 3,3'-diaminobenzydyny (DAB) jako odczynnika reagującego z Se (IV). Najwyższą zawartość selenu wykazano w próbkach kaszy gryczanej i mannie szymanowskiej, a najniższą w próbkach ryżu.

The aim of this study was to determine trace levels of selenium in cereal products. The determinations were performed by spectroscopy using 3,3'-diaminobenzidine (DAB) as the reagent reacting with selenium (IV). The following cereal products were tested: buckwheat grits, pearl barley (various grades), semolina, wheat and rye flour (various grades), potato and maize flour, rice (various grades). Prior to the determinations, the samples were wet mineralised. Mean regain values were 80.3% to 110.3% for the AAS; 88.8% to 109.2% for spectrofluorimetry and from 87.0% to 105.17% for spectrophotometry. Selenium was found to be present in all tested flour grades. Much lower selenium levels were detected in the rice samples (0.144 mg/kg). The highest selenium concentrations were found in buckwheat grits (0.750) mg/kg) and in the semolina (0.675 mg/kg). Our results show that selenium content values of the tested cereal products are similar or higher than the corresponding values found in the available literature.
