The beginning of food science in Poland date back to the late fifties, when the Committee of Food Chemistry and Technology of the Polish Academy of Sciences was created, and the journal Annals of Food Chemistry and Technology (at present Polish Journal of Food and Nutrition Sciences) was establish. The main research centers were the faculties of food technology come into existence in sixties at Olsztyn, Poznań and Warsaw Agricultural Universities and Łódź Technical University, as weil as industrial instituties (biotechnology, dairy, meat, oil, sugar). Scientific activity and co-operation with the industry created scientific basis for the development several branches of the food industry and elaboration new technologies e.g. for smoke concentrates, processing of rapeseed, canned meat products (ham), baby food products, frozen and concentrated fruit, vegetables and other foodstuffs.
