Przedstawiono wyniki oznaczeń zawartości azotanów i azotynów w papierosach, herbatach czarnych, herbatach owocowych oraz w ich naparach.

Nitrate and nitrite contents in various sorts of tea and cigarettes have been determined. In total, 28 sorts of black tea, 14 sorts of herbal tea, 39 sorts of Polish-made and 11 of foreign cigarettes have been analyzed. Leaching yield of nitrate and nitrite into the tea infusions was also determined. Nitrate and nitrite contents were determined by the method recommended in Poland for testing vegetable food products. The method is based on Griess reaction and uses sulphanilamide and N-(-naphtyl) ethylenediamine; nitrates are reduced to nitrites in a column filled copper-coated cadmium. Mean nitrate content in black tea and herbal tea sorts was 73,6 and 1522,8 mg KNO3/kg, respectively, and the corresponding nitrite content was 0,9 and 1,2 NaNO2/kg, respectively. Mean leaching yield was 99% for black tea., 96% for the herbal tea, and 89% for the medicinal tea sorts. Nitrate content of Polish and foreign cigarettes was very high, 13170 and 11428 mg KNO3/kg, respectively, and nitrite content was 3,0 nad 1,5 mg NaNO2/kg, respectively.
