W posiłkach przedszkolnych badano zawartość tłuszczu ogółem oraz procentowy skład kwasów tłuszczowych. Stwierdzono, że w składzie kwasów tłuszczowych tłuszczu zawartego w posiłkach przedszkolnych przeważały, niekorzystne z punktu widzenia profilaktyki miażdżycy, nasycone kwasy tłuszczowe.

Total fat content and fatty acid profiles of nursery school meals were evaluated. The fat content was determined by the Folch method and the fatty acid methyl esters were separated by gas chromatography with 50 m long CP Sil 88 capillary column. The fat content in the nursery school meals ranged from 22.9 to 98.1 g/meal (mean 46.4 g). Total saturated fatty acids in the fat of the meals ranged from 33.7% to 63.4% (mean 47.6%) of total fatty acids; the corresponding figures for the other constituents were from 26.4% to 43.9% (mean 35.2%) for the monounsaturated fatty acids, from 7.0% to 23.6% (mean 14.1%) for the polyunsaturated fatty acids, from 1.0% to 4.9% (mean 2.6%) for the trans isomers, and from 0.10% to 0.97% (mean 0.33%) for the CLA. The content of the total fat in the nursery school meals was within the range of the recommended value for children from 4 to 6 years of age but the meals were too high on saturated fatty acids and too low on polyunsaturated fatty acids. The nutritional value of fat in the nursery school meals was inappropriate in terms of atherosclerosis prevention.
