In the paper results obtained during three years field and laboratory experiments are presented. The aim of the studies was to determine the effects of different levels of nitrogen (0 to 180 kg N•ha-1) on yield and technological parameters of grain of three leading Polish winter cultivars: Korweta, Zyta and Mewa. Results were obtained from field trial performed in the Experimental Station at Bałcyny. Laboratory analyses were performed according to Polish standards used for cultivar testing. It was proven that the yield of cv. Korweta increased along with increasing N fertilization up to the rate of 143 kg N•ha-1. For cultivars Mewa and Zyta this increase was found up to the rate of 150 and 165 kg N•ha-1, respectively. Mean productivity of nitrogen amounted to 19-21 kg grain•kg-1 N irrespectively of studied cultivar. Nitrogen applied at rates up to 90 kg N•ha-1 favourably affected flour values. For rates of 150 and 180 kg N•ha-1 the reduction of values of this parameters was noted. Best values of parameters determining baking quality were found for the grain of Zyta cv. and lowest for that of Mewa. Protein content and its quality determined by sedimentation test increased with the highest rates of nitrogen applied. An interaction was found for sedimentation number between nitrogen level and tested cultivar.
