PL
Lipazy stanowią bardzo ważną grupę enzymów o wszechstronnych możliwościach wykorzystania w procesach biotechnologicznych. Preparaty lipaz stosowane są w reakcjach syntezy, hydrolizy i modyfikacji tłuszczów, produkcji związków smakowo-zapachowych, rozdziale mieszanin racemicznych i analityce chemicznej. W artykule przedstawiono problematykę immobilizacji lipaz przez adsorpcję oraz dokonano przeglądu handlowych nośników stosowanych do adsorpcji enzymów lipolitycznych. Szczególną uwagę poświęcono zagadnieniu selektywnej adsorpcji lipaz na nośnikach o silnie hydrofobowej powierzchni.

Lipases are one of the important enzymes, which are used in specific organic synthesis, hydrolysis of fats and oils, modification of fats, flavor enhancement in food processing, resolution of racemic mixtures and chemical analyses. This article contains information concerning the immobilization of lipases by adsorption and characteristic of commercial carriers used for this purpose. Special emphasis is paid to the selective adsorption of lipases on strongly hydrophobic support surfaces.
