Kwas askorbinowy biogenetycznie jest związany z monozami. W postaci krystalicznej jest odporny na utlenianie, natomiast w roztworach dysocjuje i łatwo ulega utlenianiu. Jest znanym i decydującym antyoksydantem wobec reaktywnych form tlenu, rodników nadtlenkowych i tlenu singletowego. Celem badań było określenie wpływu różnych dawek ołowiu, cynku i miedzi na poziom kwasu askorbinowego w surowicy krwi i niektórych tkankach szczurów. Przeprowadzone badania wykazały, że podawane w pożywieniu metale - Pb, Zn i Cu wpływały na stężenie kwasu askorbinowego w surowicy krwi i badanych tkankach szczura. Ponadto wykazano, że stężenie kwasu askorbinowego zależało od rodzaju badanej tkanki i wielkości podawanej dawki metalu.

Ascorbic acid is biogenetically linked to monosugars. In the crystallised state it is resistant to oxidation but in solution it dissociates rapidly and oxidises. It is a well-known and most important antioxidant to the reactive forms of oxygen. The purpose of these experiments was to determine the influence of various doses of lead, zinc and copper on the level of ascorbic acid in blood serum and certain tissues of rats. The results showed that metals (Pb, Zn, Cu) added to rats' feed influenced the concentration of ascorbic acid in blood serum and tissues of rats. Furthermore, it has been shown that ascorbic acid concentration depended on the type of tissue tested as well as on the dose of the metal.
