Przedstawiono na przykładach wpływ surowca, wody, oraz wybranych procesów technologicznych na składniki żywieniowe piwa. Zwrócono uwagę na składniki korzystnie oddziaływające na zdrowie konsumentów, np. aminokwasy, witaminy, sole mineralne, polifenole oraz na przyczyny występowania związków antyżywieniowych, np. amin biogennych.

It was presented using the example of raw material water and the selected technological processes influencing the nutritive beer ingredients. Author paid attention to the ingredients having the possitive effect on the consumer health such as amino acids, vitamines, mineral salts, polifenols and the reasons of occurence of ingredients having the negative effect like biogenic amines.
