W pracy omówiono modele matematyczne procesów: oddychania, transpiracji, zmian jakości bulw oraz wymiany ciepła i masy zachodzących w warstwie ziemniaków podczas ich przechowywania.

The following processes occur during potato storage in a storage facility: potato tuber breathing, transpiration, and quality changes (chemical composition changes). Additionally, an exchange of heat and mass between potatoes and the ambient air takes place within potato layer. The amount of process related mass loss and the quality of potatoes after storage depend on the intensity of these processes. This paper presents mathematical models of the above processes and partial empirical verification of the models.
