Materiał badawczy stanowiły owoce aronii, borówki czernicy i porzeczki czarnej o dojrzałości konsumpcyjnej. W owocach scharakteryzowano składniki dietetyczne - błonnik detergentowy kwaśny (ADF) i pektyny, składniki bioaktywne - związki fenolowe ogółem i antocyjany. Określono ponadto aktywność wiązania rodnika syntetycznego α,α-difenyl-ß-pikrylhydrazylowego (DPPH) i rodników hydroksylowych (OH) przez wyciągi metanolowe z owoców.

Research material comprised fruits of chokeberry, bilberry, and black currant of consumption maturity. From among the dietetic components of fruits acidic-detergent fibre (ADF) and pectins, and also phenolic compounds, including anthocyanins - from the group of bioactive substances, were characterised. Effectiveness of binding of α,α-difenyl-ß-picrylhydrazyl synthetic radical (DPPH) and inhibition % of hydroxyl radicals (OH) by methanolic extracts from fruits were assayed. Significant statistical differences in contents of the determined components were found among the investigated fruit species (p<0.05). In the group of analysed fruits, the highest concentrations of fibre and total pectins were observed in black currant fruits. Phenolic compounds, including anthocyanins, in highest amounts were present in fruits of chokeberry. Simultaneously, chokeberry showed the highest scavenging effect on DPPH radical and the highest inhibiting activity towards hydroxyl radicals.
