The research concerning the use of ultrasounds for shaping the physical properties of meat was carried out at the University of Agriculture in Lublin. The results of this research served as the base for constructing the commercial-scale machine, with ultrasound elements, for meat massaging. The machine consists of container with three dividing walls (working capacity about 350-400 kg) with a drive (8-12 rpm), ultrasonic subunit, hydraulic system (for container positioning), and vacuum system. The whole machine is placed on a frame supporting structure. The chief point of machine's work is to put the meat under the influence of changing stresses caused by rotary movement of the container with dividing walls and by stresses appearing within the ultrasonic area. Hydraulic system allows to load and unload the container.
