W artykule przedstawiono niektóre oddziaływania systemy produkcji i skupu mleka na jego właściwości technologiczne.

The system of milk production for industrial processing, its collection from individual farmers, and delivery to the processing plant(s) constitutes an important element of the development of rural infrastructure. The current system of milk production on small fanns and its delivery to processing plant through a network of collection facilities has a negative impact on milk processing properties. Therefore, the tendency is to discontinue this system and replace it with a system based on collecting milk into testing apparatus equipped tankers. This will assist in improving raw milk processing properties and will make such processing less energy intensive.
