Antitryptic activity and tannin levels in some legume seeds were examined. The highest antiryptic activity was detected in the seeds of all examined varieties of bean, UV-irradiated kidney bean (75.14 TlU/mg total protein) in particular, and of Polan soybean (59,39 TIU/mg t.p.). The lowest trypsin inhibitor content was detected in red-cotyledon lentil (22.19 TIU/mg g.p.). Tannin content in the material varied from 1.83 to 8.78 g/kg dry matter. The highest tannin level was found in lentil. Red-cotyledon lentil contained 8,78 g/kg dry wt. Polan soybean and Nadwiślański horse-bean contained less tannin, 4,82 g/kg dry wt and 5,61 g/kg dry wt, respectively.
