Celem pracy było zbadanie zmiany stosunku do wegetarianizmu uczniów Zasadniczej Szkoły Gastronomicznej w Poznaniu. Anonimowe badaniami ankietowe przeprowadzono dwukrotnie na tej samej grupie uczniów. Pierwszy raz, gdy byli w pierwszej klasie, a drugi raz, gdy byli w trzeciej klasie. Ankieta zawierała pytania zamknięte dotyczące osobistego stosunku uczniów do wegetarianizmu, wiedzy żywieniowej oraz możliwości wykorzystania potraw wegetariańskich w gastronomii. Na przeprowadzenie badań uzyskano zgodę Komisji Bioetycznej AM w Poznaniu. Statystyczną analizę wyników przeprowadzono przy pomocy programu komputerowego SPSS 6.1 for Windows, stosując test niezależności w tabelach kontyngencji. Posłużono się statystyką chi kwadrat Pearsona. Stwierdzono, że lata пай ki-przyszły zawód uczniów był czynnikiem najbardziej różnicującym uzyskane odpowiedzi. Nauka uczniów w zasadniczej szkole gastronomicznej wpłynęła na zmniejszenie się ilości uczniów akceptujących wegetarianizm i wegetarian i zwiększenie ich wiedzy żywieniowej. Silne zmniejszenie akceptacji wegetarianizmu przede wszystkim wśród przyszłych kelnerów należy ocenić bardzo negatywnie. Natomiast korzystnie należy ocenić nieznacznie wyższą wiedzę żywieniową przyszłych kucharzy niż kelnerów.

The aim of this project was to investigate the change in the attitude towards vegetarianism in the Poznan Gastronomy College students. An anonymous questionnaire - based research was carried out twice on the same group of students. First time - during their first year of study and second time in their final, third year. The questionnaire contained non-open ended questions related to personal attitude towards vegetarianism, general nutrition/diet knowledge and the utilisation of the vegetarian recipes in the gastronomy. The research was carried out with the permission of the Biotic Commission of the Medical University (Academy) in Poznan. The statistical analysis was carried out by means of the SPSS 6.1 - for Windows computer programme. The independence test was utilised in the contingency tables, the chi square Pearson test was utilised for the statistics. Results obtained indicate that the education duration/faculty was the most differential factor in the answers. The education duration had influenced the students' attitude towards vegetarianism - there was a noticeable decline in acceptance of this life-style. This seems to co-relate with the increased nutrition/diet knowledge/education. A worrying trend has been noticed in those students, who opted for the waiter faculty - where the attitude towards vegetarianism was the most negative. Conversely it is uplifting that the future chefs/cooks had presented a higher, than the waiters, nutritional/diet knowledge.
