Określono stopień rozpuszczalności, lepkość, absorpcją oleju oraz oznaczono stopień sorpcji wapnia, magnezu i żelaza na preparatach inuliny metodą spektrometrii atomowo- absorpcyjnej. Stwierdzono, że preparaty inuliny charakteryzowały się zróżnicowanymi właściwościami funkcjonalnymi, takimi jak: rozpuszczalność, lepkość i absorpcja oleju. Stopień sorpcji badanych pierwiastków był zróżnicowany, zależny od rodzaju pierwiastka i odczynu środowiska.

Certain functional characteristics (solubility, viscosity, oil absorption) of two inulin preparations (Raftiline HP and Raftiline HPX) and their sorption abilities of minerals like Ca, Mg and Fe were analyzed in this study. Both preparations demonstrated different functional properties. With the behavior dependent on the water temperature and concentration of preparation, good solubility of examined preparations was observed by low concentrations. The Raftiline HPX preparation was characterized by lower oil absorption in comparison to the Raftiline HP. The viscosity of examined preparations based water solution was increased with the increase of inulin concentration. By higher concentration of preparations (above 20%), solutions were more viscous and creamy, while above 40%, both preparations demonstrated gelling properties. Sorption properties of inulin preparations varied by each mineral and depended on pH value. Examined preparations showed higher sorption ability of calcium in comparison to magnesium and iron. Both of preparation demonstrated better sorption properties under acidic conditions (pH of 1.8).
