W pracy przedstawiono wyniki oznaczeń zawartości miedzi, cynku, manganu i żelaza w wybranych krajowych produktach mięsnych, drobiowych, wieprzowych i wołowych oraz oszacowano, w jakim stopniu produkty te pokrywają dzienne zapotrzebowanie na te składniki u dorosłych i młodzieży w wieku rozwojowym. Stwierdzono duże zróżnicowanie zawartości badanych metali w zależności od rodzaju zwierząt i badanego elementu tuszki.

The aim of the work was to determine the content of copper, zinc, manganese and iron in the meat and meat products in relation to the kind of meat and its origin. The concentrations of the metals were determined in: chicken, duck, turkey, pork and bovine meat; chicken and turkey livers, hearts and stomachs; (minced poultry ham; frankfarters; turkey sirloin and ham; pork ham and bacon; Krakowska, Podlaska sausages; Italian and black headcheese). The samples were collected in the Lublin and Cracow regions. The determinations were performed by ASA after dry mineralisation at 400°C. The average Cu concentrations were: 0.46 to 0.88 mg/kg in poultry, 0.62 to 0.77 mg/kg in pork, and 0.62 to 0.74 mg/kg in beef. The average Zn levels were: 5.84 to 27.58 mg/kg, 25.00 mg/kg, and 39.43 mg/ kg, respectively. Mn concentrations were: 0.30 to 0.48 mg/kg, 0.16 mg/kg, and 0.15 mg/kg, respectively. Poultry Fe content ranged from 4.43 to 28.05 mg/kg. The pork meat contained 13.00 mg/kg iron, while the respective value for the beef meat was 0.33 mg/kg. The poultry giblets contained: 0.92 to 4.09 mg/kg Cu, 22.11 to 34.05 mg/kg Zn, 0.61 to 3.79 mg/kg Mn, and 24.98 to 115.97 mg/kg Fe. The levels of those elements in pork hasiets were: 4.38 (liver), 7.50 (kidney) mg/kg Cu; 29.02 (kidney), 44.77 (liver) mg/kg Zn; 1.33 (kidney), 2.41 (liver) mg/kg Mn; 63.38 (kidney), 279.87 mg/kg (liver) Fe. The beef hasiets contained: 3.08 (kidney), 17.36 (liver) mg/kg Cu; 23.94 (kidney), 35.94 (liver) mg/kg Zn; 0.94 (kidney) 2.27 (liver) mg/kg Mn; and 62.07 (kidney), 142.81 (liver) mg/kg Fe. The cured poultry products contained: 0.46 to 0.75 mg/kg Cu, 7.81 to 19.78 mg/kg Zn, 0.42 to 0.59 mg/kg Mn, and 6.23 to 134.34 mg/kg Fe. In the pork and beef products, the Cu contents ranged from 0.57 to 1.03 mg/kg, while the levels of Zn, Mn and Fe were 12.72 to 35.70, 0.30 to 143.75, and 0.14 to 0.56 mg/kg, respectively. Cu, Zn and Fe levels in the turkey and chicken thigh meat were twice as high as those in the breast meat of those birds. The detected amount of Zn and Fe was higher in beef than in pork. The highest amounts of those metals were found in livers.
